There are certain flavors that just go together. Mint and chocolate are two of those flavors and has always been a favorite combination of mine. In fact, my favorite ice cream is mint chocolate chip. So when I found this recipe several years ago, it quickly became a much loved seasonal go to.
Mint Chocolate Chip Cookies
Ingredients:
1 pouch (or box) of sugar cookie mix (1lb 1.5 oz) Betty Crocker works nicely.
1/2 cup of butter
1/2 teaspoon mint extract
8 drops green food coloring
1 egg
1 cup mint baking chips (Andes makes some and I believe Nestle does as well)
1 cup semisweet chocolate chips
Directions:
Preheat oven to 350 degrees. Mix all ingredients together. Using small cookie scoop or spoon drop dough 2 inches apart on to greased cookie sheet. Bake 8-10 minutes.
Notes:
As per usual I’ve tinkered with it. I added more mint extract and more food coloring and I’m not done. ☺ I’m going to try a homemade sugar cookie recipe instead of a prepared mix. If you like a little less mint flavor only use with 1/4 tsp of mint extract. For less color, reduce the drops to 6 drops of green food coloring.
